Crispy Roasted Chickpeas: How to Get the Crunch Right

October 8, 2026 By Alli P.

Crispy roasted chickpeas are my favourite after-school snack, salad topper and late-night nibble. Yet the first batches I made were chewy, not crunchy. The fix turned out to be simple. It comes down to three things: how you cook the beans, how dry they are, and when you add the spices.

This guide starts with dried chickpeas, because that is what I keep in the pantry. It works with leftover cooked chickpeas too.

Start with dried chickpeas, cooked just right

First, cook the beans until they are tender but still hold their shape. Soft, falling-apart chickpeas never get properly crunchy. Instead, they turn leathery in the oven.

According to the Harvard T.H. Chan School of Public Health, dried chickpeas can be soaked for at least 3 hours or overnight. For 1 cup of dry beans, the same page suggests 3 cups of water and a 60 to 90 minute simmer, and notes that presoaking cuts the cooking time by about a quarter. Chickpeas also bring protein, fiber, folate and iron to the table.

For roasting, I stop the pot a little early. When a chickpea squashes easily between two fingers but keeps its skin mostly intact, it is ready. My full method is in cooking dried chickpeas, and I use our Premium Chickpeas for every batch.

Dry them well for crispy roasted chickpeas

Water is the enemy of crunch. As long as there is moisture on the surface, the oven steams the chickpeas instead of roasting them.

So, after draining, tip them onto a clean kitchen towel. Fold the towel over and roll them gently back and forth. Then leave them spread out on a tray for 20 to 30 minutes. They should look matte, not shiny.

Should you peel the skins?

You do not have to. Still, the towel rub loosens plenty of skins, and I pick those off. Fewer loose skins means fewer papery bits in the bowl. However, I never peel every single chickpea by hand. Life is too short.

How to roast chickpeas in the oven

This is the method I come back to every week.

  1. Heat the oven to 400°F (200°C).
  2. Toss 2 cups of cooked, dried chickpeas with 1 tablespoon of oil and a pinch of salt.
  3. Spread them in one layer on a large baking sheet. Give them room.
  4. Roast for 20 minutes, then shake the tray.
  5. Roast for another 10 to 15 minutes, until golden and rattling.

Next, taste one. It should crunch all the way through, or at least have a crisp shell and a light, dry centre. If it is still soft, give the tray another five minutes.

Why one layer keeps roasted chickpeas crispy

Crowded chickpeas trap steam between them. As a result, the outside softens before it can brown. If your tray is small, use two trays rather than piling them up.

When to season roasted chickpeas

This is the step that changed everything for me. Ground spices burn at roasting heat, and burnt paprika or cumin tastes bitter. That is why I roast the chickpeas with only oil and salt.

Then, while they are still hot, I toss them with the spices. The warm oil on the surface grabs the seasoning and holds it.

Seasoning ideas my family loves

  • Chaat style: chaat masala, a little red chilli powder and a squeeze of lemon.
  • Smoky: smoked paprika, garlic powder and a pinch of sugar.
  • Za’atar: za’atar and a drizzle of olive oil, great over a salad.
  • Dukkah: a spoonful of our pistachio dukkah, made with shelled pistachios, for a nutty crunch.
  • Cinnamon sugar: a sweet treat that disappears in minutes.

How to keep roasted chickpeas crunchy

Here is the honest truth. Roasted chickpeas are at their best on the day you make them. Even so, a few habits help them last.

  • Cool them on the tray. Leaving them in the switched-off oven, door ajar, dries them out further.
  • Store them uncovered or loosely covered. A sealed tub traps moisture and softens them.
  • Skip the fridge. The cold, damp air makes them chewy.
  • Re-crisp if needed. Five minutes in a hot oven brings back most of the crunch.

Ways to use them in the week

Beyond snacking, a jar of crispy chickpeas earns its place in my kitchen.

  • Scatter them over salads in place of croutons.
  • Spoon them onto soups just before serving.
  • Pack a small pot in lunch boxes next to fruit.
  • Add them to grain bowls for texture and extra protein.

FAQ: crispy roasted chickpeas

Why are my roasted chickpeas chewy?

Usually they were still damp, crowded on the tray or taken out too early. Dry them well, give them space and roast until they rattle when you shake the pan.

Can I make them in an air fryer?

Yes. Cook them at around 390°F for 12 to 15 minutes and shake the basket a few times. Smaller batches crisp more evenly.

Do I need to peel the chickpeas?

No. Peeling gives a slightly crunchier result, but it is optional. Rubbing them in a towel removes most loose skins with little effort.

A tray of crispy roasted chickpeas costs very little and keeps everyone happy between meals. Once you have the method down, the seasonings are endless.
